It’s worth looking at the “Hiking Cape Town” FB page there’s a likelihood someone on there will point you in the right direction.
Sadly unscrupulous Tour operators are booking out all the available spaces and then hoarding them and selling on at a profit sometimes they come unstuck at the last minute though
