I love taking my own meals with me on hikes too. This is one of my favourites:
"Power" Couscous
¼ cup whole wheat couscous
⅓ cup sundried tomatoes
⅓ cup dried onions
1 tbsp peanuts
1 tbsp nutritional yeast
1 tbsp sunflower seeds
½ tsp paprika, cumin, garlic & onion powder
1 tsp coconut flakes
5 dried olives, salt & pepper
Add 1 ½ cup sundried tomatoes and 1 cup of water to the pot and bring to a boil
• Remove from heat and add your ingredients
• Stir thoroughly and place lid on top to steam
• Allow to sit for 10/15mins or until water is absorbed
Also, super easy to clean and lightweight and gives a lekker nutritious punch.
